It had been a number of years since I had visited, because I had been disappointed with the way the cuisine was going and the prices were increasing a little too quickly.
But the return gave us a very pleasant surprise! The key word will be harmony: superbly balanced dishes without superfluities and quite original. A special mention to the carrots, smoked trout, a superb combination; veal rice with endives, original and mastered. Small flaws despite everything, in my opinion: the overcooked bar which makes it stringy, the grapefruit granita in the dessert which adds nothing, and even distracts from the overall harmony.
Special mention for a very efficient and discreet service.

Lunch with family and friends among the vineyards. The new chef confirmed all our expectations. The original and surprising flavors with Japanese inspiration amazed our taste buds. The produce from the vegetable garden as well as the wine list for all tastes are appreciable. A top experience, worthy of its Michelin star. A very good gastronomic address in the region.

Pernand Vergelesses is a “lost” hamlet in the western hollow of the Aloxe mountain. At Charlemagne, we find ourselves parachuted into the middle of nowhere, in the heart of the vines, whether it be the reds of Pernand, or the whites of Charlemagne.
Here, a cuisine that aims to be inventive, Franco-Japanese, Japanese-French, it’s whatever you want. Magnificent successes like this bearded meat gravy, or this Corton pigeon. However, sometimes complex associations which will certainly become simpler with maturity.
An absolutely complete wine list of local vintages, and at prices that are not massive medieval blunderbusses. Appreciable.
A friendly service, but one that must learn to relax: we are not here to judge, but to, quite simply, appreciate.
A place that is therefore worth the detour.

Cuisine with a less Japanese connotation, while remaining very well done. Efficient service, wine list, always very Burgundian, and at fairly reasonable prices.

Delicious meal, giving local products a Japanese touch. Memorable sweetbreads, too bad the portion was so small. Wine list with some old vintages to please yourself. Excellent and very friendly service. Looking forward to going back.
