I share at least two things with this chef: our first name (rare!) and a taste for "well done." And that's an understatement. Everything was very well done.
A remarkable experience, following the thread of our local produce, guided with inventiveness and mastery by the entire team, with service provided by talented chefs and excellent wine recommendations.
Special mention to the saucier. A few daring surprises, perfectly executed, pushing the boundaries of structure and sublime flavors in a pleasant atmosphere.

A wonderful discovery featuring seasonal, local, and simple products, elevated by the chef's imagination. We thoroughly enjoyed our meal, the servers were excellent, and the atmosphere was relaxed. I highly recommend it. A particular favorite was the salted caramel lentil dessert with buckwheat ice cream. Absolutely delicious!

We discovered Le Prince Noir for the first time, and what a wonderful surprise it was!
We chose the signature menu with wine pairings and non-alcoholic beverages. From the appetizer to the dessert, everything was absolutely impeccable. Each dish was exquisitely beautiful and told a true story. The cooking was perfectly executed, the ingredients were showcased to their best advantage, and the seasonings were remarkably precise. The balance of flavors was exceptional.
Upon arrival, we were warmly welcomed by a team that was as professional as it was delightful: the waiter, the head waiter, and the sommelier. The explanations of the dishes and wines were almost poetic, making the experience even more immersive.
We also had the privilege of visiting the kitchen and meeting Chef Vivien Duran. A precious moment, punctuated by the tasting of a scallop amuse-bouche. Watching the team in action is a spectacle in itself, which only whets the appetite further.
A truly wonderful experience, a real gastronomic adventure.
A precious memory… and we will definitely be back.

We were a little disappointed by this restaurant, unfortunately…
We tried the tasting menu and the vegetarian menu, both with wine and drink pairings.
Regarding the food: the dishes were generally good, but we weren't blown away and were sometimes a little surprised by their simplicity (which isn't necessarily a bad sign, I admit). Furthermore, I felt that the vegetarian options weren't showcased enough: they always seemed less elaborate than their meat counterparts. In addition, during the amuse-bouche, my partner was served a scallop, while I was given an extra serving of truffle instead: I thought that was a shame. I had higher expectations for this type of restaurant, which, in my opinion, should be committed to highlighting vegetarian cuisine and demonstrating that it's entirely possible to offer sophisticated, delicious, and flavorful vegetarian menus.
The experience in the kitchen was very enjoyable. The cornbread and butter were particularly delicious. The cheese trolley was well-stocked, mainly with sheep's milk cheeses.
The dessert was very good, but again, one expects more from a Michelin-starred restaurant. For comparison, I've always been served several desserts at Michelin-starred restaurants (usually three) with very varied flavors for a unique culinary experience, whereas here there was only one dessert with lentils (but why lentils??) which didn't add much.
Regarding the drinks: the wines were generally good. The non-alcoholic drinks weren't all of the same standard; in my opinion, this offering wasn't very appealing.
The service was very, very good; however, we waited quite a while between courses.
In conclusion, having dined at several Michelin-starred restaurants, I have to say that at similar prices, this restaurant doesn't measure up.

We were greeted with a warm, professional, and unpretentious welcome.
The ambiance created by the restaurant's decor suggests that the chef has poured all his passion into it, a prelude to what we would later discover on our plates.
The quality of the meal was flawless from start to finish. A journey of surprises and reinterpretations, we were guided by the chef's inspiration and the use of local, seasonal produce. A particular highlight was the endive root, prepared to order by the maître d'hôtel. (He was absolutely perfect, by the way!) In short, we waited far too long to finally step inside this restaurant, and we can't wait to go back again…
