I had already come many years ago (at least 30 years ago) to this good cassoulet address, and I had very good memories of it. Eager to introduce our emblematic dish to colleagues from other regions, and to change a little from my other usual addresses, we chose this address. And we were not disappointed. Very good, rich and tasty cassoulet. The goose confit was perfect and so were the beans. Washed down with a Clape wine (Château Bouysset - les bécassines). Only happiness.
Very pleasant service.
I wouldn't wait 30 years to go back

Being in a nearby hotel, we were looking for a restaurant with Toulouse specialties…. Le Colombier fulfilled all our wishes! A TOP cassoulet without a doubt one of the best in Toulouse, with its goose sleeve, the famous Toulouse sausage, and these famous Castelnau beans, so tasty and tender. The dish enhanced with a super Madiran.
To finish, the warm and delicious apple puff pastry, with its scoop of prune ice cream.
So an address to happily recommend... By the way, the service was also TOP, the owner extremely kind, as were the ladies at the service.

This cassoulet is the best I have had the opportunity to taste in a restaurant. The flavors are exceptional and offer a unique taste experience. The service is attentive and the advice is sound.
