Fine cuisine in a serene and welcoming atmosphere. The chef, who is very friendly, likes to share about his job which he is passionate about! Tasting his personal farigoule wonderfully ended our meal.

Warm and intimate place! We feel the passion of Déborah and Mathieu from the welcome to the plate.
We opted for the menu with Côte de Bœuf (reservation required) and it was a great success, the whole table left satisfied with the dishes and wine pairings suggested.
We will come back with pleasure!

Thank you for this surprise menu which delighted the taste buds of the entire table! The prime rib was delicious and tender, the chef makes a point of making you happy and it shows. If you come by this week, I recommend that you try the zucchini soup, I personally fell in love with the breadsticks... 😉

After a long day of driving, we arrived at the Balthazar counter, the restaurant is superbly located and the dishes are simple but delicious. The atmosphere is also very pleasant, the waitresses are polite and attentive. An address that I highly recommend if you are visiting near Apt and on an excursion to Saignon

Not to be missed. A gem in the heart of Saignon, facing an iconic church. Chef Mathieu and his wife Déborah offer high-quality dishes that showcase regional and seasonal products—the menu isn’t extensive, but there’s a good reason for that! For example, this week, we ordered a surf-and-turf starter with andouillette that even won over my uncle, who usually prefers traditional flavors. The desserts, especially the ice cream, are a must-try. The wine list is memorable, with a selection directly from their meticulously chosen cellar (we opted for a Bandol rosé). I also highly recommend the Gin T'Olive, not to be missed, garnished with small flowers sprinkled on top. They are delightful and attentive; this restaurant alone is worth the trip to the village.

Two excellent lunches during our stay in Saignon. We enjoyed Mathieu’s simple, seasonal menu, nicely executed, with a super choice of local wines to go with. Deborah’s service was warm and professional, and the shady terrace is a lovely place to sit and watch the world go by. Thank you!

S'il est une table incontournable dans le Lubéron, c'est celle de Balthazar.
Petit établissement, grande table du plus haut niveau.
Des recettes extrêmement subtiles qui ravissent tous les palais, des matières locales fraîches de la minute et à parfaite maturité.
Le chef, Mathieu, prépare des plats originaux qui nous transportent. C'est le Van Gogh de la gastronomie !
