This is a constraint confidently embraced by the chef, who cannot tolerate customers not ordering the same menu, such as a main course and dessert.
Once this initial inconvenience is overcome, one discovers a refined, flavorful, and exquisitely delicate cuisine.
The service was laborious that day, with a head waiter unable to communicate the restaurant's philosophy. The kitchen assistant serving the dishes was more at ease and approachable. Four courses and coffee took over two and a half hours, even though the service only accommodated seven guests.
This is not really ideal.
The restaurant's overall positioning remains to be determined. The cuisine is undeniably of a superior gastronomic standard. The decor and tableware are well thought out, but the service and communication remain poor (the website doesn't do everything, you have to be able to verbalize your positioning in a way that isn't brutal) for, for example, a Michelin star.
