Le Formal - Caves Henri IV sur Aix-En-Provence

Set menu: starter, main course, dessert; gourmet fare for 35 euros this Saturday lunchtime. It was delicious, generous, and original. Unbeatable value for money in Aix-en-Provence.

An excellent experience at this gourmet restaurant nestled in the heart of Aix-en-Provence. We chose the seven-course tasting menu to discover new flavors, and we both left thoroughly impressed! The flavor combinations were as comforting as they were surprising, and the value for money is unbeatable for a menu of this type! The staff was very pleasant throughout the meal, and the chef was attentive to allergies. A must-try if you're ever in Aix.

A wonderful experience at Les Caves d’Henri IV. An intimate restaurant in Aix-en-Provence, and one of the best. The service was very pleasant and warm. A lovely interaction with the front-of-house team and the kitchen staff. The cuisine was delicious and sophisticated, with particular highlights including the summer fruit chutney sorbet with the duck breast, the Saint-Nectaire cheese with pear compote and coffee reduction, and the pumpkin dessert! I recommend the 7-course tasting menu. Excellent value for money.

You have to pay a little attention to find the place. It's a restaurant in vaulted cellars with well-spaced tables. The €35 set menu (starter, main course, dessert) is extraordinarily refined, served on original tableware, which enhances the flavor of the dishes: the different flavors create a surprising result that delighted our taste buds. The best part: special attention was given to me, as I had an arm in a cast. The waiter offered to have my meat sliced. The result was amazing: it was reconstructed with thin slices. I appreciated this thoughtful touch. The wine was also very good, and I was served a St. Germain spritz as an aperitif, even though it wasn't on the menu. We will definitely be back because it's an excellent place.

We were regulars at Formal and enjoyed Jean-Luc's cooking. His cuisine was quite traditional and refined. We decided to return after the reopening, and what a revelation it was! The cuisine was modern, sophisticated, and so diverse in its tastes and flavors! Thank you to the chef and his entire team! We will gladly return!
