The pastries have real cake colors, concerning the sugar: just enough, nothing to do with the stalls of ultra-sweet and ultra-processed green, pink or yellow "cakes" that we are unfortunately now used to seeing everywhere.

Finally !!! After 13 years in Poitiers, I came across the sign in the street saying “Pain au levain”. What's more, cooked in a wood oven.
A loaf and a baguette later, I'm moved, it's delicious.
I finally found a bakery that reminds me of real Southwestern breads. No sourness linked to the industrial leavening of fake ange, banette bakeries and other horrors full of additives.
Finally real cooking! The bread is cooked, very colorful but not dry! Its crust is light, not very thick, and its crumb has retained a level of humidity making the whole thing very pleasant.
Sourdough provides rich, complex and simple flavors. Certainly an ideal bread for those who love good cuisine, traditional cold meats and cheeses.
Price-wise, I wasn't surprised.
This bread is not dry like in those "bakeries" with industrial supermarket techniques.
The feeling of satiety arrives quickly, which also makes it a diet ally (Loaf of country bread).
In fact, storing it in a clean cloth will make it last for the week... unless you have devoured everything first...
It's been a long time since a company gave me the feeling of being committed to offering quality products.
