A tip: avoid the restaurants on the main square. Take a look in the side streets; that's how I stumbled upon LE GALION, recommended several years in a row by "Le Guide du Routard" (The Rough Guide).

The only downside is that some of the desserts aren't homemade; it's a shame this isn't mentioned. The set menu (starter, main course, dessert) for €25 was excellent, and the glass of sweet white wine was a delight.
Reservations are highly recommended.

We've been eating at this restaurant for several years, every time we're in Aigues-Mortes.
The staff is super friendly and the service is impeccable. All the dishes are delicious, and the value for money is excellent. We've never been disappointed. We highly recommend it.

It was very good, the dishes were high quality, and we enjoyed our meal.
However, the major drawback was the wait time: we arrived at 12:00 and left at 1:40 PM, just for a starter and a main course. That's far too long, especially for lunchtime service.
It's a shame, because the food is truly excellent, but the wait definitely spoils the experience.

We had lunch together, just the two of us, with our dog, and had a wonderful time. The decor was beautiful and typical, with a warm and inviting atmosphere.
Excellent value for money, with a special mention for the hot stone grill, which was very convivial and perfect for sharing a delicious meal.
The goat cheese tiramisu starter was a real treat!
The servers were very friendly, attentive, and efficient, which made the experience even more enjoyable.
I highly recommend checking it out.
