I admit I'm a bit biased, so for me, everything about the Camargue is extraordinary. Les Salicornes, however, has won my heart: immersed in the typical nature, near the bulls and pink flamingos, it offers an outdoor setting where you can cool off on hot summer days. For me, there's only one dish: the Grand Salad de chevre chaud, the best I've ever had in all of France. The owners are a bit like us Bergamo natives, seemingly reserved and gruff, but in reality they are extremely friendly and generous. For us, they're a must-visit, also because after lunch (closed on Mondays and in the evenings), you can easily reach many tourist destinations.
