The experience we had yesterday was absolutely dazzling and on par with a 3-Michelin-starred establishment.
From the delightful welcome from Ms. Bellin to the exquisite interplay of land and sea flavors, we enjoyed every detail.
A special tip of the hat to the two young women working in the dining room: the sommelier is a true expert in her field and shares her passion and favorites with great enthusiasm. We opted for the wine pairing and were treated to a very diverse selection—including a blind tasting, which we requested ourselves, and whose results often surprised us (it was a humbling experience). The head waitress, with her charming Toulouse accent and mischievous smile, also won us over with her perfect mastery of every detail of the chef's cuisine (down to each ingredient used) and, above all, with the coherence, the profound meaning, the poetry she so skillfully conveyed through her words to describe this progression of dishes that embraced their local terroir.
