As a self-taught restaurateur, I'd like to offer some constructive and friendly feedback. Regarding the couscous (having grown up with a Pied-Noir tradition), I would have liked to see more authenticity and flavor. Fresh vegetables, a more pronounced seasoning with ras el hanout and coriander, and homemade kefta would truly make a difference. The raisins with caramelized onions are an excellent idea—perhaps they could be showcased even more to add depth to the dish. We are perfectly willing to pay the price (€20-25 for a complete meal doesn't bother me), but what brings a customer back is the memory of a truly delicious and generous experience. This message is obviously not intended as negative criticism, but simply to share a sincere feeling, with the desire to encourage your work and your continued growth.
