Excellent experience at the restaurant of the magnificent Nouveau Monde hotel. It embodies the excellence of the Raulic group's restaurants. Delicious and original cuisine, charming staff. Thank you for everything.

This isn't my first time at this restaurant, and my opinion is always very positive. It's a restaurant with beautiful, inventive cuisine, and the dishes are presented with care and attention to detail (and the tableware is magnificent). My only complaint is that the portions are really small. Luckily, the petit fours, pre-starter, delicious rolls, and Bordier butter are there to complement and enhance the meal. Personally, I didn't find the unsweetened mascarpone quenelle in my tiramisu (which was quite original in its overall composition) very appealing, and the espresso wasn't good (don't they have coffee like Nespresso or something else?). In my opinion, it doesn't live up to the restaurant's standards. Nevertheless, I really like this restaurant, I won't hesitate to return, and I recommend it.

Disappointing: a "beautiful" restaurant definitely doesn't make a "good" one... The food was bland and tasteless, from the "pompous" but flavorless preparation of the oysters to the breaded, overcooked, and dry skate (we had to ask for extra sauce), not to mention the inattentive service. Unfortunately, it's only worthwhile for the magnificent sea view, provided you're lucky enough to get a table by the windows.

A high-end restaurant with excellent value for money! Impeccable service, original and refined dishes! And a sea view with the possibility of watching the sunset! A truly wonderful culinary experience!

We were welcomed into a very pleasant setting and dined overlooking the sea (be sure to mention this when booking). We were served by Marina and Laura, who were very friendly, always smiling, and offered excellent advice throughout the meal. The food was absolutely delicious. The chef works wonders with subtle flavor combinations. Thank you for this fabulous experience.

The meal was almost perfect. The only slight drawback was the amuse-bouches and starters. The onion confit was ice-cold and would have benefited from being brought to room temperature a few minutes before being served. The same was true for the langoustine carpaccio. Luckily, we had to wait for the three glasses of white wine we ordered to accompany the starter, which gave the langoustines time to come back to room temperature. The rest of the meal was excellent. Your restaurant is one of the rare establishments where the quality and progression of flavors are maintained throughout the meal. Often, the starter is exceptional, bursting with flavors, sometimes even surprising ones, and the following course seems relatively bland and unremarkable in comparison. Congratulations to the chef and his team. The service was a little disappointing. The various waiters, as well as the head waiter, weren't very attentive (perhaps they were tired). This didn't spoil our enjoyment, but it did detract from the overall experience. With just a little more effort, your establishment, and especially your cuisine, deserves a Michelin star and ranks among my top 5 restaurants, three of which are Michelin-starred. In conclusion, I will return and recommend your restaurant without hesitation.
