No wonder, given that the chef, Masayoshi Hanada, trained in Japan and then worked in the Emperor's kitchens in Tokyo before arriving in Paris. Every fish is exceptional, selected according to the day's catch. Here, there's no set menu; the master decides, a bit like a conductor composing a score based on the morning's inspiration. The Final Word You leave with eight different sushi, each one more incredible than the last. And being so few at the table gives a real sense of rarity, almost the feeling of having been invited rather than having made a reservation.

Nestled near the charming Square Louvois, this restaurant seats only eight, a rare intimacy that Chef Masayoshi Hanada, trained in the kitchens of the Emperor of Japan in Tokyo before setting up his own kitchen in Paris, transforms into a true privilege. The discreet charm of the décor soothes you from the moment you enter, inviting you to observe, to open your senses rather than comment. Conversations are hushed as you observe the other diners, their smiles discreet, a touch awestruck by the setting, the table, and the master chef already at work before your eyes. Eight at the table, almost a dinner party rather than a simple meal at a restaurant. The server doesn't present the sushi; he tells its story. The chef's gestures impress and delight the eyes long before the palate. It's beautiful, delicate, like a series of miniature paintings unfolding at each stage. And upon tasting, you finally understand that you've never actually eaten real sushi. The wave of flavors and textures surpasses anything words can describe. A 1-star sushi restaurant. The prices are on the expensive side, but reasonable considering the cost of living in Paris. A Japanese chef and staff who speak Japanese. I liked that they explained the menu in both English and Japanese. Overall, it is a standard sushi omakase, but the occasional French touches are charming.

An incredible atmosphere from start to finish. Even after spending several hours there, we still didn't want to leave. I'd recommend this place to everyone, even those who aren't particularly into Japanese cuisine. The menu offers plenty of unique and unexpected flavor combinations, so there's something to surprise just about anyone.

I chose Sushi B after reading numerous excellent reviews, with great curiosity and high expectations. The experience was interesting, but unfortunately a little below what I had hoped for. The ingredients are high quality and the presentation is very meticulous, but I was less convinced by some of the flavor balances. I found the sushi rice too salty, which sometimes overpowered the fish. Similarly, some of the seasonings were quite prominent and tended to mask the delicate, natural taste of the fish, which is at the heart of this type of cuisine. One thing also bothered me even before lunch: I received a message the day before about a dessert, but this message contained the names of the other lunch guests. This struck me as a lapse in confidentiality and customer information management. In the end, an experience with good intentions and obvious effort, but which did not totally convince me, particularly due to a lack of subtlety in the seasoning and this communication error.

What a wonderful discovery in the heart of Paris! This restaurant offers a culinary experience of absolute refinement. The quality of the ingredients is exceptional, and each bite is a true surprise. I particularly appreciated the precision in the presentation of the dishes. The caviar dish was simply sublime. The atmosphere is calm, intimate, and perfect for savoring these creations. It's flawless from start to finish. I will return with great pleasure.

A truly exceptional experience. We've been twice and have also visited Japan, where we've tried Michelin-starred restaurants: this place surpasses them all. The cuisine is full of emotion, and the service is excellent (a huge thank you to the sommelier who perfectly selected sakes that were both approachable and perfectly paired). It's a place to visit and an experience to have in your lifetime if you have the chance.

From start to finish this was an incredible curated experience of tastes, colours, service and mastery in Japanese cooking that we had the privilege to enjoy. The intimacy of sitting around an 8 person table watching our chef prepare and serve each plate was truly unique and although I struggled to finish the last few maki’s I made space because the food was just too good! The staff were able to accommodate our specific dietary requirements with ease after we gave 1 week notice of what we can and can’t eat, and it didn’t feel like any less of a quality experience because each menu is bespoke for the night you are dining. Thank you for such a wonderful and unforgettable experience!
