Symbiose -Old Fashioned Stories- sur Bordeaux

Great little restaurant in the heart of Bordeaux. Food is always delicious and the staff is super accommodating and friendly. Great cocktails! Highly recommend.

For cocktails, we had a Zombie, which was extremely good, with a small shot of alcohol served in a passion fruit shell, almost "on fire." We also had another cocktail whose name I unfortunately forget, with a hint of herbs/plants, also very good—you should try it. As for the main courses, I remember the beef tartare with satay, which was extremely good, served with sweet potato chips and a garden herb mayonnaise. I highly recommend it. For dessert, I had a coffee dessert with small pieces of coffee, which was extremely good, as well as a chocolate whisky tart, which was a pleasant change from classic chocolate tarts (hazelnut or otherwise). My only complaint is the wait, which was a bit too long. Apart from that, it's really worth a visit and a discovery; the dishes are out of the ordinary. I recommend it.

Our first night in Bordeaux, after 17 hours of traveling, we stumbled upon this absolute gem. The hidden speakeasy vibe immediately drew us in, and everything that followed exceeded our expectations. From the mussels appetizer and flavorful olives to the incredible dry-aged T-bone steak, every bite was outstanding. The cocktails were just as memorable as the food, and the service and atmosphere were equally exceptional. What an amazing find! If you’re visiting Bordeaux, Symbiose is a must. Highly recommend!

The food was incredibly delicious, every dish was full of flavor. The atmosphere was calm, cozy, and softly lit. The cocktails were unlike anything we’ve tried before: creative, unique, and beautifully presented. We’ll definitely be coming back! Highly recommended.

A lovely evening at Symbiose yesterday. I really enjoyed the decor and the atmosphere (in the back room), very cozy, with decorations on the ceiling, walls, tables, etc. The wine was very good, but I was a little disappointed by the food we ordered: the hummus was frankly lacking in salt, and even after sending it back to the kitchen for more, it lacked flavor. The olives were nice, but again, I like them with a bit of spice, a little bit spicy, and these were very mild. That said, it's a pleasant place, I'll definitely go back :)

The cocktails are very creative and delicious. They are a little more expensive than in a typical bar, but this is fully justified by the quality and originality.
