Refined cuisine.. Superb presentations.. We had a wonderful evening. We really enjoyed ourselves. I recommend it without hesitation.. And I will return as soon as possible.

Absolutely the best restaurant in Tarbes and the region—well worth a detour, as the guidebooks say! Warm, attentive service and outstanding food. Matt cooks with heart and soul—you can taste it in every bite. Creative, delicious amuse-bouches and nice portions let you enjoy the full experience: starters, mains, and desserts. It’s a place to slow down and savor, with a fantastic wine list to match. We had a delicate tomato infusion and a vibrant octopus ceviche to start, followed by a charcoal-grilled côte de bœuf—spectacular. The Domaine Peyre Rose from Coteaux du Languedoc was a perfect pairing.
