I'm rediscovering this restaurant after several months. Bravo for the flavors! Flawless in the pairings. Fresh and flavorful cuisine with fresh, expertly prepared ingredients. A chef who not only knows how to work but is also welcoming and attentive to your well-being. I've been coming to Aigues-Mortes for a long time, and many restaurants change chefs or close down... Alas! For me, this is number one in Aigues-Mortes proper.

Second visit and still just as exceptional! A 1 hour 15 minute drive to get here, and it's absolutely worth it. Delicious and refined dishes, beautifully presented, in an elegant and sophisticated setting. A huge congratulations to the entire team, both front and back of house, for their professionalism and passion. A must-visit!

29/03/2026: This isn't our first time at Bistrot Paiou, and each visit is just as delightful. The flavors are always exceptional, the meats are cooked to perfection, and the presentation is as elegant as it is delicious. A huge thank you to the chef and the entire team for their warm welcome and professionalism, which allowed us to enjoy another wonderful meal together. We will definitely be back!
