Excellent food and friendly, competent service. Plus, you can sit outside in the shade, making it quite bearable even in the sweltering heat.
Starter: Tuna Tartare
Main Course: Paleron de Taureau, or roast beef. Wonderfully tender and flavorful meat. The accompanying vegetables still had a nice bite. Fantastic!
Dessert: Ile flottante. Delicious.
I also had a non-alcoholic beer called "Free Jazz," which was excellent for a non-alcoholic beer.
Highly recommended.

We had a wonderful evening at the bistro. The food was excellent and the service warm and professional. It was our first time here, but certainly not our last. We have more than a week's holiday left in Aigues-Mortes and will definitely eat here again. Thank you for the great evening and the lovely experience.

Vraiment incroyable! We had dinner at Bistrot Paioù and the food was outstanding from start to finish — definitely have to recommend this place. The paleron de taureau (façon gardiane) was so tender, and the jus was absolutely on point, un vrai régal. We also had the tartare de taureau au couteau as a starter, and it was super delicious, beautifully cut and full of flavor.
Service was friendly, atmosphere très sympa, and overall just a great experience. Bravo à toute l’équipe — we’ll definitely be back next time we’re in the area!

Fantastic! We loved the food. The toro tartare was spectacular, the ceviche too, and we had a delicious fish dish. The desserts were wonderful; we tried two and both were excellent. They have a good selection of wines by the glass and offer excellent recommendations. The place is small but beautiful and cozy, and the staff is very friendly.
