Generous cuisine and a very friendly welcome.

The wait was far too long, 2 hours. The servers seemed lost among the tables. The portions weren't very generous. What a shame.

I highly recommend this restaurant. Its cuisine, regional products, and expertly managed service by the ever-smiling David, along with the shaded terrace, will surely convince you to stop by – a visit you won't regret! 👍👍

An institution not to be missed in Payolle!

A must-visit in Payolle. It's a place that many locals (from Tarbes to Campan) recommended to me. Through the menu, we journey through the history of sharing local dishes, via family recipes. The garbure (for one person, two large plates) is a real treat. The braised andouillette sausage is a delight with its smoky flavor. The potato with its sweet potato sauce on a bed of local cheese is divine! Given the generous portion of garbure, I was a little disappointed by the size of the dish. However, it was exquisite. And the dessert, a chocolate pavé with crème anglaise, was the perfect ending. I should have brought a digestif to wash it all down. Next time. Large parking lot opposite, beautiful Pyrenean views, tables under the trees, wheelchair accessible. Sure, there might be some regular noise from passing motorcycles and cars, but we're at the foot of the Col d'Aspin, so it's not really a problem. It's all part of the charm of Payolle! Reservations recommended for groups.

Please note, reservations are not possible except for groups, and even then it's not guaranteed. If you want to eat there, you must arrive before noon or from 1:30 pm onwards for the second seating. The dishes are very well presented. The meat is cooked exactly as requested, and in a generous quantity and of high quality. The Bigorre pork ribs are absolutely delicious, and the side dishes are excellent (fries, potatoes with ventriche and melted cheese on top, although the mestruet was a bit disappointing). The desserts are very well presented. Special mention goes to the blueberry tart. The service was a little slow, but we didn't notice the time passing. It's the beginning of the season, so they need to find their rhythm.
