A wine bar like few others. The snails are simply superb, the foie gras is incredible—the kind you'll never forget. And the wine… what can I say about the wine, except that it's always spot-on, always inspired. Special mention to Guillaume, Charles, and Killian: amazing, genuine, precise, and vibrant service. They don't just serve you, they guide you. Those who know already know. Those who have never been should rectify that mistake as soon as possible.

The Owl Cellar is a landmark of Dijon's cultural scene. Located in the heart of Godrans, the cellar plays a central role in the life of the neighborhood and the city, and its influence extends far beyond its borders, as its name resonates throughout Burgundy and even France. Indeed, with a name like that, you know what to expect: good drinks and good jazz. Speaking of jazz, live bands regularly perform there, and the atmosphere is always lively. For example, the band Guess What, the last bastion of funk in Burgundy, plays regularly and blends perfectly with the classy and edgy ambiance of this bar. On the other side of the room, you'll find the bar. The centerpiece of the place, a place where passions mingle with memories... Over time, I've had the opportunity to see many talented people pass behind this piece of furniture, each as passionate as the next, but always perfectly in keeping with the friendly atmosphere of the cellar. This weekend, I had the pleasure of meeting Killian, who, despite his young age, has already proven himself. Indeed, between two lively drinks, an espresso martini, and other pear-shaped cocktails, my companions and I were able to chat with this young prodigy of the shaker, who already has a very sharp blade. The wine list reflects the character of the place: an assortment of excellent choices, enough to satisfy you in any situation. And yes, the cellar is a wine bar first and foremost, before being a jazz club, and it lives up to that title perfectly. The cocktail/beer and other aperitif selection is just as charming; there's something for everyone. I'd like to conclude by paying tribute to the manager who, in my opinion, deserves a John Bates Clark Award, given how expertly he runs this place. My thoughts also go out to the entire bar team, without whom the place wouldn't run smoothly. Le Caveau de la Chouette is a must-visit that I wholeheartedly recommend.
