Simply put, it's my favorite restaurant in Paris. The food is divine, the service perfect, and the dining room incredibly pleasant. I've eaten sweetbreads many times, but never like theirs.

Absolutely divine. One of the best in Paris for meat dishes, and I compare it to the many Michelin-starred restaurants I've had the pleasure of visiting. The sweetbreads and lamb, in particular, are masterpieces of technique, skill, and deliciousness. (But vegetarians will also be delighted with the agnolotti cacio e peppe!) The service is friendly and wonderful, which is a definite plus. Finally, the wine list is a veritable bible (though a bit pricey...), confirming the chef's epicurean leanings and boasting a wealth of classic and niche wines to enhance the meal. Go there before this restaurant is overrun by American and Japanese gourmets!

What a wonderful experience! We opted for the lunchtime tasting menu, and the quality/quantity/price ratio is unbeatable for the level of excellence of the meal. The courses (5 in total, including one dessert) were all very inventive (crispy calf's head with jalapeno jus, no kidding??) and delicious. We left with full stomachs and smiles on our faces. The service was excellent, with a superb wine recommendation from the sommelier (a white Crozes-Hermitage) that paired elegantly with every dish. This is a restaurant that's sure to rise in status very quickly, so enjoy it before it gets its first Michelin star! (We wish it well!) Congratulations, Mr. Shmitt, a great success!

Great place. I went for the famous cassoulet (amazing!) and discovered plenty of other dishes. The wine list is exceptional. We had two nice burgundy (white and red) and some good digestives to finish. Service was amazing, looks like one person handling everything but super efficient, fast and friendly!!!

A true culinary revelation! Everything I tried was on another level, but the tomato and sardine tart deserves special mention. It is, without exaggeration, food fit for the gods; the perfect balance between the sweetness of the tomato, the smoky touch, and the perfect crispness of the pastry. A true work of art that makes you want to return instantly! I recommend it 100/10.
