Our final evening in Carcassonne was dinner at the truly amazing Comte Roger. We started with a local cocktail of sparkling cremant with peach and apricot liqueur- superb! The foie gras starters of semi-cooked duck foie gras - with a mille-feuille of green apple, apricot, celery, dark chocolate chips and brioche for my wife and I had the most delicious tart tatin of pan-fried foie gras escalopes with caramelized apples with Muscat de St Jean de Minervois, golden sesame tuile and a tartine of Lairière goat’s cheese.
The main courses were for me- Vol au vent by Comte Roger - Mussels, spinach, cuttlefish, velouté seasoned with local saffron, summer vegetables, Mediterranean sea bream fillet and peeled prawns. For Vicky it was- French veal tartare - seasoned by Compte Roger with artichoke, pine nuts, onion, chives, candied tomato, celery sticks and homemade potato churros.
I also opted for a dessert- ‘The Triangle’- frozen parfait with muscat from Saint Jean de Minervois, Languedoc oreillette and seasonal fruit coulis. We ordered a bottle of my favourite Boutenac Cháteau Saint-Estèbe ‘Astreos’ 2019- a classic from my Great Horkesley Wine Centre days! Probably one of the best restaurants in which I have ever had the pleasure of dining in France.

Disappointing restaurant, we had endless service, a crazy amount of time + 45 minutes between the starter and the main course, an apology from the waiter informing us that there had been a little delay but I think above all that he had forgotten our order because the tables next to us had their dishes and the restaurant was far from being full…
An aperitif where the blanquette had no bubbles it was the bottom of the bottle, the dishes were not up to standard... the bread is always late and it's not high season so no excuses..
I wouldn't say it's a bad address but there are much better places in Carcassonne!!!!

If you want to eat an excellent cassoulet, this is the restaurant you should go to with your eyes closed.

An amazing meal - the best foie gras we’ve ever had. The tagliatelle is also wonderful. The staff are so lovely and the food is so good, we went back two nights in a row!

In the center of the city of Carcassonne, this restaurant is an institution for their Cassoulet. Rarely seen such attentive and professional service! Hearty and quality dish. A restaurant that really stands out from the other “tourist trap” restaurants located in the same location. I can only recommend!
