Mmm, mushroom sauce that actually tastes like mushrooms, foie gras ravioli that actually tastes like foie gras... thank you... thank you again. June 13, 2026: Surprisingly, the duck confit meat remained attached to the bone, which is quite rare and therefore very much appreciated, a sign of superior quality. And once again: potatoes with mushroom sauce that actually taste like mushrooms!!! Bravo!

If you're going to Carcassonne, you absolutely must visit Le Chaudron; it's a must-try. We were a group of 30. The owner and servers were fantastic! And let's not even mention the excellent cassoulet! It had a rich flavor without being too greasy. So many great ingredients! A very generous gizzard salad. And a perfectly smooth pavlova. In short, pure pleasure!

We came to eat at this restaurant on a Sunday evening. It had a friendly atmosphere and was surrounded by greenery. We particularly enjoyed the delicious dishes, which were presented with care. Thank you to the team for a lovely time!

Highly recommended. The cassoulet is a substantial and filling dish. Even though I'm a good eater, I recommend ordering a plate and sharing. Service is sometimes inattentive: I had to ask for water twice, and I'm still waiting for a refill on the bread. But that's a small thing. Save room for the desserts, which may seem trivial but (e.g., pavlova and profiteroles) actually offer a huge surprise.

24/05/2026: The welcome was fantastic! We went without a reservation, even with our large dog, and they found us a quiet spot… The cassoulet was hearty and delicious, and the crème brûlée was perfect! I highly recommend it! Thank you ☺️ 🐾
24/05/2026: Very courteous and friendly staff. The young woman was patient with us, explaining the dishes even though we didn't speak French. We plan to return and recommend the place to others.
