A fantastic discovery! The new owners have just taken over the restaurant, and what a wonderful surprise! We loved it from start to finish. The dishes are truly excellent, flavorful, and beautifully presented. The setting is simply magnificent: elegant, refined, and welcoming—you feel right at home. And above all, unbeatable value for money! This is a place that truly deserves to be discovered and, in my opinion, will quickly become a must-visit. We opted for the "Sharing" menu, which allowed us to sample several flavors. The entire meal was accompanied by an excellent red Burgundy wine. We had a wonderful time!

Dinner with friends. We chose the set menus. Honestly, they were as delicious as they were beautiful, as the dishes were very well presented. They used seasonal produce and the portions were just right. The dessert was delicious and original. We hadn't been back since the change of ownership. Next time, adding vegetarian options would make it perfect. We highly recommend it.

27/08/2026: A must-visit during our stays in Les Sables-d’Olonne! We come to Bistrot Sablais every year during our stay in Les Sables-d’Olonne, and it’s always a pleasure to return. It’s become a real tradition for us! The welcome is warm and friendly. The place is very pleasant, modern, and beautifully decorated, making for a truly enjoyable experience. A special mention goes to the manager, who is incredibly friendly, attentive, and business-minded. Her welcome and helpfulness are particularly appreciated. An address we happily recommend and where we will return, as we do every year!

06/08/2026: A beautiful establishment with an absolutely magnificent terrace overlooking the sea! Everything was delicious and the service was perfect.
05/08/2026: Superb place; the setting, the location, and the succession of courses are incredible. The dishes were exquisite. A minor point: the empty aperitif glasses were still on the table, and the wine arrived late. They are young, you have to understand, they are learning. Highly recommended.
