A splendid setting, with a warm and refined atmosphere. Everything was delicate, delicious, and perfectly balanced. A true delight! The service is still finding its feet (it's the start of the season, after all), but the team is friendly, helpful, and attentive, which is very pleasant. Well done to the entire crew, we'll definitely be back :)

It's true we always arrive a bit unceremoniously... but tonight it was a no-go. The bar seats on the right as you enter were politely informed that they were full. Oh well, maybe next time. But above all, keep the kindness and smiles you had at the launch last year...

A truly wonderful discovery: this "annex" to the adjoining three-Michelin-starred restaurant run by Alexandre and Céline Couillon. Luckily for us, as La Marine hadn't yet reopened for the season, we had the chance to watch the chef and his wife at work. We appreciated the warm welcome, the quality, kindness, and simplicity of the service, the perfect charcoal grilling, the attention to detail in each dish, and the exquisite flavors… A truly delightful experience, without a doubt. A tip: reserve a table at the counter to admire the ballet of the kitchen brigade as they whirl about in a meticulously efficient choreography.

A Culinary Masterpiece with Room for Improvement in Seating Our recent lunch at Élise in l'Herbaudière, Noirmoutier, was a truly memorable experience, dominated by the exceptional quality of the cuisine. However, the seating arrangement regrettably detracted from the overall enjoyment of the evening. The Food: A Creative and Flavorful Triumph (5/5) The culinary experience at Élise is nothing short of superb. The kitchen delivers a deeply impressive menu marked by creative execution and an inventive use of local, marine-inspired ingredients. Each dish was a delightful surprise, showcasing combinations of ingredients that were surprisingly harmonious and profoundly tasty. It was a genuine testament to high-level cooking, offering a great culinary journey that we would highly recommend to any food enthusiast. The flavors were bold, precise, and utterly satisfying—a true highlight of our trip to the west of France. The Ambiance & Layout: An Inconvenient Oversight (3/5) While the food reached five-star heights, the table layout unfortunately grounded the experience. We were seated at a small table for two positioned directly in front of a wine display window. The tables were placed so closely together that our chairs were practically against the wall-mounted wine rack. This proximity created a persistent and awkward inconvenience: the staff had to interrupt our lunch a few times, leaning over or reaching past us to access bottles requested by other diners. This constant intrusion, necessitated by the cramped layout, made it difficult to relax and fully immerse ourselves in the beautiful meal we were being served. Conclusion Élise boasts a kitchen of exceptional talent, deserving of the highest praise for its creative and wonderfully tasty dishes. The food alone warrants a visit. However, management should seriously address the spatial constraints in the dining room, particularly the tables near the wine display. Improving the flow and ensuring diner comfort in these specific spots is essential for the front-of-house experience to match the extraordinary quality of the cuisine. Go for the food, but be prepared for a potentially close encounter with the wine list!

25/03/2026: An impeccable three-Michelin-starred restaurant, resolutely focused on seafood. The dishes are magnificent and imbued with a great deal of artistry... the talent of the chef and the team is undeniable. My only reservation is the somewhat cold dining room with its rather harsh lighting... I think the restaurant would greatly benefit from reworking its lighting design.
20/03/2026: From the moment you arrive, the experience begins with a truly original welcome that immediately immerses you in the atmosphere. You instantly sense that you're not in a typical restaurant. Walking past the kitchens to meet the staff is a real bonus: a very pleasant, lively, and authentic moment that adds a wonderful human touch to the experience. Once seated, however, the dining room decor seems rather ordinary and somewhat understated compared to the rest of the experience, which contrasts with the initial impression. As for the food, there's nothing to criticize: the dishes are beautifully presented, with a real attention to detail. The meal is both delicious and generous, which is rare enough in fine dining to warrant mentioning. A particular highlight was the seafood broth and the lobster, absolutely incredible, both for the precision of their flavors and the emotion they evoke. The service is undeniably professional and perfectly executed, but can seem a little impersonal at times. Overall, it's a top-notch gourmet restaurant where you can feel the immense effort and dedication of the entire team. The experience is memorable and well worth having, although personally, I would place it more at the level of an excellent two-star restaurant than a three-star one.
