A very beautiful place, but although the name remains, the chef at La Table d'Emilie has changed, as has the quality. Never disappointed by the "historic" restaurant, I didn't find its signature style here. The cuisine aims for (too) innovation, but some combinations don't work. The starter was rather simplistic: a zucchini blossom stuffed with a bland filling and accompanied by four small mussels that seemed out of place. The squab was very good, but a small gratin dauphinois or mashed potatoes would have been welcome, as we were left wanting more. The dessert was unremarkable, and to top it all off, the second choice of starter wasn't available that day (even though it was cuttlefish-based, not hard to find), and the turbot offered as a main course was also unavailable. It's a shame; another (very) good restaurant has disappeared.

My first visit was enchanting. This one less so, probably because we were a table of 4, and we had to order the same menu for everyone...and it had flavors based around coffee (a drink I hate).

Located in a central location in the very pretty town of Marseillan, in a historic house, we immediately liked the entrance area. With a keen sense of the building's history, the rooms have been beautifully designed and furnished. We were somewhat surprised that the kitchen area received significantly less attention, and the floor there in the entrance area shows some signs of wear. The very functional wine refrigerators, unfortunately in plain sight, aren't a visual highlight either. However, drawing conclusions about the cuisine from this would be completely wrong. The finest regional produce is skillfully and imaginatively transformed into delicious dishes, for which we award one star, contrary to the relevant gourmet guide. However, the service, in terms of absolute attentiveness, cannot compete with the excellence of the kitchen. We had to wait a relatively long time for our wine order, and our glasses weren't refilled promptly, which prompted some tables to take the initiative. Overall, however, we put these impressions aside and, given the performance of the kitchen team, we would gladly return anytime. However, we recommend reserving seats in the main room, as far away as possible from the automatically opening kitchen door. For warmer days, a limited number of seats are available in the equally beautiful courtyard.

A restaurant recommended by the Michelin Guide that definitely deserves a star. Accessible gourmet cuisine, offering excellent value for money—it's definitely worth the detour.
The restaurant is magnificent, with several elegantly decorated settings. Being a solo diner, I was seated in a charming vaulted room, which made the experience even more intimate and enjoyable.
The service was impeccable, attentive, considerate, and meticulous, with a real sensitivity toward solo diners, which is particularly appreciated.
An excellent meal: the trip is definitely worth it. The restaurant fully deserves its Michelin recommendation and could definitely qualify for a star.
I chose the six-course tasting menu, accompanied by petits fours and a bread course with two homemade butters.

"There, all is order and beauty, luxury, calm, and voluptuousness"—this is how I would sum up our culinary experience, echoing the words of Baudelaire. There was no false note in the decor, the ambiance, or the service, enhancing the original, creative, and refined cuisine.
We were also very impressed by the beauty of the venue, the choice of tableware that enhanced the dishes, the professionalism of the dining room staff, the jazzy soundtrack, and the chef's presence at each table—a very welcome touch.
We decided to discover this place to celebrate our wedding anniversary, and we had a wonderful evening. We are delighted that Marseillan is home to such a quality gem.

Gault & Millau awarded two toques to the restaurant La Table d’Émilie
La Table d’Émilie has just joined the select group of chefs recognized by the renowned Gault & Millau guide. Two toques and a score of 13 for cuisine prepared with impeccable ingredients by a talented chef. A wonderful accolade for Thomas Sanvoisin, who is bringing Marseille's gastronomy to the forefront for the first time.
When the young chef moved to Marseillan in 2018, he already had a solid background and had learned his trade at La Barbacane, a prestigious Michelin-starred restaurant in the city of Carcassonne. After a few stops in Savoie, he met Daniel Boulenc by chance, who for 32 years had brilliantly managed this illustrious restaurant in the heart of Marseillan, the birthplace of the poet Achille Maffre de Baugé. A historic and welcoming setting, a listed doorway invites you to discover a vaulted room with original stonework opening onto a stunning patio. The chef is as captivated by the setting as by the town, which warmly welcomes him and his partner Emy.
The establishment has since offered inventive cuisine, made with fresh, seasonal produce, favoring local producers whenever possible. Thomas Sanvoisin doesn't delegate the task of sourcing his products; he chooses them himself at markets and from local producers based on criteria of quality, proximity, and freshness. 85% of the wines on the menu are also from Languedoc-Roussillon. The chef favors signature products such as calf sweetbreads, fish, and shellfish like lobster or Carabineros shrimp.
A close-knit team works closely with the chef to prepare the 60 daily meals. His partner Emy, a pillar of the back office, an inventive pastry chef who thinks outside the box, Romain Bellamy, and a maître d'hôtel Christophe Jeunot, who has been his right-hand man for eight years now. A well-deserved recognition that carries the colors and reputation of the town high.
