Excellent, intimate restaurant in the heart of Pau, in the Foirail district. The small menu changes regularly, featuring fresh, seasonal produce. The €34 set menu includes a choice of two starters (foie gras with mango coulis or cream of asparagus with Viking salt), two main courses (seared scallops with spelt and morel sauce or veal sweetbreads with seasonal vegetables), two amuse-bouches, and for dessert, a cheese plate or two desserts (chocolate brownie with a blood orange medley prepared three ways, or pineapple cake with pineapple carpaccio and exotic fruits). Everything is 100% homemade. Cooking and seasoning are impeccable, and the service is pleasant and professional. The small wine list offers excellent vintages at reasonable prices. We went to the restaurant on a Thursday evening, and there were only two tables there, including ours. It was simply perfect! We had a reservation; the owner welcomed us and provided very kind service. And what can I say about the chef, who prepared excellent and very refined dishes for us!
