At the Hôtel Café de Paris, everything begins with the sea—not just a view, but a presence, almost a slow breath that pervades the room and imposes itself on both the eye and the body. The vast, ever-changing horizon soothes, dissolves tensions, and establishes a kind of inner silence. The room then becomes an observation post, suspended between comfort and immensity. Then comes the meal, delivered with discreet precision. Room service here is elevated to an experience. The vol-au-vent, generously filled with morels, sweetbreads, and a remarkably well-prepared semi-cooked foie gras, makes one thing clear: that of a masterful, almost sensual cuisine, where textures respond to aromas with goldsmith-like precision. Nothing is overdone, nothing is missing. The impeccable service fades into the background, letting the gestures speak for themselves. And in this perfect economy, only the essentials remain: the sea, the night, and the rare feeling of a moment fully accomplished.

We had lunch at Café de Paris as part of Restaurant Week. The setting is magnificent, the staff very pleasant and attentive, and the food delicious.

The scallops were excellent, not to mention the mille-feuille! The staff were also incredibly attentive. I highly recommend it without hesitation.

I'm leaving this review for the CAFE DE PARIS restaurant because I didn't stay at the hotel. The consulting chef is Eric Frechon. The restaurant is fantastic, with high-end, homemade cuisine. I highly recommend the vol-au-vent with sweetbreads and morels, for example—it's delicious. The service is attentive and caring. There's a terrace in front of the restaurant when the weather is nice. Reservations are recommended.
