I've been frequenting Corsican restaurants since 1989, and this is the first time I've encountered such a perfect combination of food quality, service, and location. In the center of Île Rousse, in a small square overlooked by a huge ficus tree that provides shade, the table attendants will be able to suggest and explain the dishes, their provenance, and their preparation. The plating, the tableside preparation of some courses, and the presentation of the desserts are worthy of a Michelin-starred restaurant. The Corsican wine is well-presented, showcasing the region and its key notes. I've been browsing several times, and this is the first time I've stopped to eat; it was a very pleasant surprise. I had the tuna "mi cuit," a lemon dessert. The tuna was fantastic, served with sautéed vegetables and a drizzle of extra virgin olive oil. To me, it's a meat more similar to beef than fish, and the dish perfectly captured this idea. The dessert was exceptional, with expertly crafted contrasts between the flavors. Congratulations!

We returned for the second time during our visit to L'Île-Rousse. The waiter explained each dish very well, and the waitress was also very pleasant. It's a shame that not all the staff were smiling.
