A wonderful experience at Le Saint Hilaire on Saturday evening, September 19th. We had the pleasure of discovering Le Saint Hilaire for a birthday dinner, and it was an absolutely exceptional experience. From the welcome to the service, and of course the cuisine, everything was perfect. The dishes were refined, creative, and beautifully presented, with flavor combinations that were both delicate and original. Each plate was a true discovery and a testament to great skill. The setting is elegant and welcoming, and the team was incredibly attentive throughout the meal, demonstrating both professionalism and kindness. This restaurant is well worth a visit and contributed perfectly to making our birthday evening unforgettable. A huge thank you to the entire team at Le Saint Hilaire for this wonderful experience. We went to the restaurant, which was excellent. The team was close-knit and worked together harmoniously. The dessert made with sweet onions from the Cévennes was wonderful!

Excellent restaurant and impeccable service. The chef plays with flavors in a very elegant and refined way. We chose the set menu and paired drinks with as many items as possible from the menu. We trusted them completely with our choices, and frankly, we weren't disappointed. And we're quite picky! So, kudos to this establishment, which also offers thoughtful touches at the table and upon departure. We particularly appreciated the playful aspect of being asked to guess what we were eating, and also the opportunity to eat one of the dishes facing the kitchen, allowing us to appreciate the organization and cleanliness of the place. It's a reminder that there's a caring person behind every dish and every creation. In short, we spent almost three thoroughly enjoyable hours there, and we hope to return someday.

Everything was perfect: the quality and friendliness of the service, the dining room, the chef's approachability, and of course, most importantly, his truly excellent, sophisticated cuisine. A special mention goes to the four tomato variations, which were exceptional. Finally, I would like to thank everyone for this fabulous experience.
