Even at breakfast, this is the most popular spot on this central square under shady plane trees. Don't expect a grande couture restaurant; it's a brasserie, but quite decent, and the service is pleasant. I wasn't disappointed at lunchtime. The regional menu featured delicious gizzards (also known as gesier) on salad, and a slice of beef diaphragm—not very well-known, but worth trying. And in France, almost never order your meat medium or well-done; rare is best and reflects the quality of the meat.

We had the pleasure of having lunch there and received a very warm welcome. The food was truly excellent, living up to both the menu and the setting. The staff greeted us very kindly and seated us, then the owner came to serve us, offering seasonal dishes made with local products (gizzards, farm-made ice cream, steak tartare, and homemade fries). Everything was delicious! Despite it being a busy day with many tourists, we were served very quickly and received a very warm welcome at a very reasonable price considering the location and the quality of the food. We will definitely be back, and Viva España! ;-)

If you're looking for authentic cuisine, a welcoming atmosphere, and a friendly team in a beautiful, touristy location, look no further than Trouvere. There you'll find seasonal, locally sourced ingredients, expertly prepared with passion, all at affordable prices. Service is quick, but be prepared to wait during peak season and when it's very busy—which is to be expected given its location within the walls of Carcassonne.

Lunch and dinner at Trouvère in June 2026: excellent welcome, relaxed yet efficient service, excellent value for money. A maxim to ponder: "Pork and Grand Marnier, that's life!"
