After eating a tourist trap cassoulet in a restaurant on the ramparts of Carcassonne, they redeemed the reputation of their dish, which is supposed to be a culinary gem. They saved their region ;)

Good.
It's a shame the cassoulet wasn't homemade.
The duck leg was overcooked.
The blue cheese sauce was overcooked and charged €2.50 for a tiny pot.
The desserts were good.

There are other options besides cassoulet, which isn't the ideal dish in 30-degree heat, in my opinion... Well-prepared and tasty, typical bistro atmosphere. However, the fresh pineapple coupe was clearly from a can.

We'd already been to the Carcassonne restaurant last year (in the middle of a heatwave at 42°C, the bubbling cassoulet was tough, but so delicious!), so we wanted to try the one in Castelnaudary this year. It was still very good, the service was quick, and we ate very well, but I still preferred the Carcassonne restaurant in terms of the dishes and set menus offered, which are different.

Sunday lunch on the veranda of this lovely restaurant. The menu features typical local products and seasonal specialties. The dishes are masterfully executed and beautifully presented. Excellent cuisine, generous portions, and friendly staff. A truly pleasant experience.

The casserole was very good and had a hearty amount of meat. The duck confit was good, although a little dry. Overall, the food was tasty and good, but you have to be careful with the waiters because they tell you things are on the menu and then charge you for them separately.

Warm welcome, not too long a wait between courses. The cassoulet lived up to my expectations, and the mango ice cream was exquisite. A good place to eat.
