This is an excellent place to stock up on the city's true specialty! The historic establishment has its original location in the heart of the city center, but also a very convenient outlet located at the city's entrance, very close to the highway exit. The only slight logistical drawback is that parking in front of the shop at the city entrance is very limited, with few spaces available. But it's still a must-visit for those wanting to take home an authentic cassoulet, whether canned or in a jar.

Excellent fresh cassoulet, but a big disappointment with the duck foie gras Hello, In October, while passing through Castelnaudary, I purchased an excellent fresh cassoulet and a jar of whole duck foie gras from your store to eat for the holidays. See photo and references. This preserve turned out to be completely bland and very pasty. Is this a batch issue or was seasoning forgotten in the lab? Originally from Castelnaudary and having tasted other cassoulets, the cassoulet from Maison Escudier is not bad but has nothing to do with a real cassoulet (tourist trap) very disappointed.

20/05/2026: I booked a 3-night stay with dinner and breakfast included. Everything was perfect. The price is very reasonable, and the food is excellent; the portions are generous, and the flavors are delightful. Kudos to the chefs! The breakfast is also substantial, and the rooms are perfect. The welcome was truly warm. As soon as I have the chance to return, I will definitely stay at your hotel again. It's very well located, and everything is within walking distance. Thank you again for the warm welcome. I highly recommend staying here; it's a truly wonderful experience.
