A modern and welcoming place. Nice furniture. The meal was particularly good, but the bavette steak was overcooked! It was bloody in the center but medium on the outside... a shame. The excellent flavor still made me enjoy the experience and finish my plate, hence the 4/5 stars.

Maison du Cassoulet Hotel Restaurant

09/09/2026: After eating a tourist trap cassoulet in a restaurant on the ramparts of Carcassonne, they redeemed the reputation of their dish, which is supposed to be a culinary gem. They saved their region ;)
09/09/2026: Dinner Crowded with only 2 servers, which is far too few. Waited over 45 minutes for our food.

01/11/2025: Extraordinary! It's pure madness to stumble upon such a restaurant in Castelnaudary. Don't hesitate: you'll be blown away! The chef? A real character—like Obelix, he fell into the kitchen as a child. The welcome and service are absolutely wonderful, sincere and warm. And the cassoulet… a symphony of flavors! A huge thank you to this magnificent conductor, a true master of cassoulet. I can't wait to go back and make my taste buds sing again!
19/10/2025: The cassoulet is excellent. All the products are locally sourced. The Audeline ice creams and their varied flavors: violet, rose, fig, cherry... The manager is very kind and attentive to our every need. He cooks and serves, hence the limited menu. I recommend it.
