A magical place in the heart of the upper Aude valley... a journey through history and a warm welcome.

A rather unreal place. The rooms are very beautiful and spacious... and obviously a little difficult to heat. The restaurant service, not to mention the menu, is exceptional. A real treat. The place is beautiful. Really.

We did not stay at the hotel but only dined at the restaurant. The setting is magnificent. The restaurant is very good but not exceptional in terms of quality/price ratio. The wines are excellent

Always an excellent welcome from the entire castle team with a special mention for Lionel and Joël.. Always attentive, pleasant and available.. Delicious meal in this exceptional setting.. We had a great evening Thanks to the whole team

This was a special occasion and we thought we'd try it as a birthday night out. Of course, we knew we'd be spending more than an average night out and would need to see the bank manager in the morning, but what hey? The service and food were outstanding. Good vegetarian options, but as ever, not enough choices. English spoken by some waiters if necessary. It was quiet , though a Monday evening, but the setting provided atmosphere in itself.

Les prétentions de la carte avec le nom du chef en exergue comme dans les très grands gastro n’est pas à la hauteur de ce qu’il y a dans l’assiette. À commencer par le service du pain avec choix du pain blanc ou aux céréales - dans les 2 cas racis ! Suivi de la crème brûlée au foie gras en amuse bouche, déjà vue et revue et surtout hyper grasse et lourde, l’inverse d’une crème brûlée. En entrée je me suis retrouvée avec les trognons de la tomates ananas (cf photo) La daurade était bien trop cuite et le fenouil accompagnant devait être bouilli à l’eau tant il était complètement insipide. Version canard, les cebettes étaient tellement dures, qu’elles étaient immangeables, dommage quand c’est le seul accompagnement. Heureusement le sourire bon enfant de la jeune apprentie serveuse a remis l’humilité là où il y en a vraiment besoin !
