17/02/2026: This establishment is an excellent option for your meals, distinguished by the quality of its cuisine, the elegance of its presentation, and the excellence of its service, provided by true restaurant professionals. The only drawback concerns the acoustics of the space, located in a former cellar, which creates a noticeable resonance. As a result, conversations at neighboring tables are clearly audible, and it's even possible to follow them due to the echo. Aside from this minor inconvenience, we highly recommend this restaurant.

15/02/2026: A wonderful discovery! The Mediterranean cuisine was absolutely delicious and perfectly executed. I had the sea bream, which was simply incredible: perfectly cooked, melt-in-your-mouth tender, and perfectly seasoned… a true delight. The ingredients are fresh, expertly prepared, and the flavors are spot on. There's a real sense of cohesion on the plate and a dedication to detail. The only slight drawback was the bread: it was a standard white loaf, which lacked a bit of character. A sourdough bread would undoubtedly have enhanced the quality and Mediterranean character of the cuisine. Nevertheless, it remains an excellent restaurant that I wholeheartedly recommend!

15/10/2025: Delightful, authentic regional Provencal cuisine. Friendly helpful service. We don't speak French but the staff did. Delicious... don't miss.. excellent wine selection, desserts, too. Parking lot is a 3 min walk away I had the beef [ bull] stew with the entree of fish soup. Most excellent... thank you

05/12/2025: A truly wonderful experience at Gibolin! Everything was delicious from start to finish, with simple yet incredibly well-executed dishes. The welcome is warm, the service attentive, and you can really feel the passion for the ingredients. A must-try in Arles!

02/12/2025: A little disappointed. The pig's trotters and ears pâté, being served hot, only accentuated the fat flavor. Serving it hot wasn't a good idea.

26/02/2026: After they kicked us out the day before and read the 0-star review we'd left, we returned to this place because it was the only one open. After recognizing us, they treated us like gods and even offered us a little something just to get us to remove the extremely negative review. Overall, a very positive experience: excellent food, very friendly staff, more than fair prices, and very reasonable wait times considering there were 15 of us (sorry for the catcalling).

19/11/2025: Shameful! Saturday night! Only one bourride available! At 9:30 pm, you see the waitresses with their arms crossed, waiting for us to leave. A disgrace. And the dishes, like the salmon, were very, very mediocre.

The welcome is warm, sincere, and attentive, while in the kitchen, the dishes are prepared with passion: a real home where everything is made with heart. The dishes are delicious, generous, and homemade, using quality ingredients. Everything was perfect, from the welcome to the plate. A friendly and authentic place that we recommend without hesitation. We will return with great pleasure!

31/01/2026: Great products and truly exceptional service. I hardly speak any French, but the saleswoman immediately switched to English and helped me very kindly. She even carefully and airtight-packed everything so I could easily take the cheeses on the plane. You can immediately tell how much emphasis is placed on quality and customer service here. Highly recommended!

14/01/2026: Now this is the kind of restaurant I love! Real, delicious food from start to finish. An amuse-bouche of eggplant caviar with warm rolls... mmm! Then came the bull rillettes, very good. Next, the Gardiane de Taureau (a traditional Camargue beef stew) with Camargue rice, perfectly cooked and excellent! And to finish, homemade nougat glacé, the likes of which I've never tasted before. The owner (who is also the chef) came out to greet us in a friendly manner. And the owner's wife gave us a most welcoming reception, kindly providing us with a map of the town and explaining the local attractions. We left satisfied and delighted with this wonderful place. Thank you for your professionalism and kindness.

13/01/2026: A very warm welcome. The meal was impeccable from the amuse-bouche to dessert. For my part, I had bull rillettes, bull stew with Camargue rice. Homemade nougat glacé. A real treat!
