Initially, I came because I share the same first name, and I discovered what is surely one of the best restaurants in the region. All the dishes are wonderfully prepared, with plenty of flavor. If you're at the port, walk 5 minutes to get a truly homemade cassoulet.

Everything is perfect. The restaurant, the people who work there, and the cassoulet is absolutely wonderful. And for those who like it, the owner plays some great rock music!

Excellent food, whether it's the sublime traditional cassoulet or the maple-glazed chicken accompanied by a very good rosé served by the carafe during this heatwave. Impeccable welcome and service. If you're passing through Castelnaudary, this is a must-visit restaurant; kudos to the team!

Excellent cassoulet, truly excellent. We ordered a nougat cassoulet for dessert for four of us because we were no longer hungry. This dessert was also superb.

Small but very pleasant restaurant. Be sure to book, especially if you want to try the cassoulet, which was excellent and very generous. Save room for the profiteroles, which are also delicious. Highly recommended.

03/08/2026: Passing through Castelnaudary, we had lunch at Quai 21 – a real treat! The dishes were beautiful and delicious... I highly recommend this restaurant.
02/08/2026: Friendly and smiling staff. Very warm welcome both on the phone and in person. We ordered two rib-eye steaks, 300g each. Delicious meat served with ratatouille and fries drizzled with pepper sauce. Absolutely delicious. For dessert, two excellent ice creams. The restaurant is located on the banks of the Canal du Midi and has a terrace. We'll be back. Toulouse isn't that far from Castelnaudary. Bruno.

26/05/2026: An excellent place! I'm always on the lookout for authentic spots, and Moulin Vert is a wonderful discovery. We had a fantastic meal! The grilled meats are simply excellent, with top-quality meat cooked to perfection. The service is also top-notch: the team is welcoming, efficient, and attentive. A major plus for sunny days: their small terrace/patio, a true haven of peace, incredibly pleasant and intimate in the summer. It's the ideal place to spend a great time enjoying a delicious meal. A really cool place that I highly recommend!
