This was my second time dining at La Barbacane restaurant, and just like the first time, we had a wonderful evening. This time we were seated inside because of the wind (the restaurant is better known for its beautiful view of Carcassonne from the top of the citadel), but that didn't detract from the quality of the experience at all. The restaurant's interior has a lot of character, with beautiful antique pieces that give the place a warm and inviting atmosphere. The service was excellent, and the staff was very pleasant. As for the menu, it hasn't changed much since our last visit, so there was less of an element of surprise, but the dishes remained just as good, both in terms of presentation and the balance of flavors. I'm always impressed by how much I enjoy a plate of vegetables!
The restaurant is perfect for a romantic dinner or a meal with friends.

Three visits, three successes.
La Barbacane is a sure bet. Each time, the quality is consistent: refined and expertly prepared cuisine, attentive service, exceptional value for money, and a stunning setting in the heart of the city.
An address I wholeheartedly recommend! I will return for a fourth time without hesitation.

Nestled within the neo-Gothic setting of the Hôtel de la Cité, the dining room of La Barbacane immediately commands respect. Beneath the finely carved woodwork and stained-glass windows that seem to whisper the history of the place, one settles into a theatrical setting where centuries are contemplated. The service, with its timeless classicism, contributes to this hushed, almost solemn atmosphere. Chef Jérôme Ryon has crafted a masterpiece of technical precision, particularly evident in his seasonal menu where black truffles appear repeatedly. The precision of the cooking and the clarity of the flavors are remarkable: each dish is a lesson in culinary construction, where the black diamond is used with a sure hand, never overwhelming the palate. The precision of the sauces and the balance of textures in the main courses testify to a distinguished culinary heritage.
A superb wine cellar that showcases the work of exceptional winemakers from the region. A slight disappointment at dessert time. Where one expected a grand finale of indulgence and generosity to conclude this truffle feast, the sweet offerings proved too intellectual, even austere. A shame.
A truly beautiful experience, enhanced by a unique setting and undeniable technical mastery. With a touch more soul and generosity, it would be exceptional.

It's always a pleasure to have lunch in this historic venue.
Living in Carcassonne, I've heard a lot of criticism lately about the quality and quantity of food.
For my part, the visual appeal, quality, and quantity combined to satisfy my eyes and taste buds...
