La Barbacane sur Carcassonne

We have been frequenting this restaurant for some time now, and with each visit, we have noticed a steady improvement in the cuisine, and above all, a remarkable consistency. Our latest eight-course tasting menu confirmed this impression once again. The cuisine is masterful and cohesive, built around high-quality, seasonal ingredients, with a strong emphasis on local produce. Mackerel, foie gras, frog legs, lobster, John Dory, and French Wagyu beef are all prepared with precision and respect for the ingredients. The cooking is perfectly executed, the combinations are spot-on, and the sauces add depth and balance to the dishes. We were already particularly impressed during our Easter lunch by the dishes featuring lamb, seasonal truffles, asparagus, lobster, and turbot. This latest experience confirms for us the evolution of the cuisine, but above all, the consistent quality of the offering. We also greatly appreciated the wine pairings, with relevant and sometimes surprising choices that perfectly complemented the different dishes. We sensed a genuine knowledge of the local terroir and ingredients throughout the entire team. The service mirrors the cuisine: attentive, warm, professional, and well-orchestrated. We felt a close-knit, dedicated team, committed to creating a truly exceptional gastronomic experience, right down to the smallest details. Our feeling is that the restaurant has reached a level of mastery, personality, and consistency that, in our opinion, deserves full recognition. Amazing food, great DJ and a beautiful garden

We came for lunch on August 15th, everything was perfect, from the excellent food to the decor and the service which was present and attentive without being too intrusive.

My daughter Carla is doing a summer internship at the Hôtel de la Cité, so we wanted to spend some time there as a family to discover this superb establishment and the cuisine of Chef Jérôme Ryon. In July, we had a delightful first experience, thanks in particular to Thomas's service and the many delicious dishes and treats we were served! We really enjoyed the all-inclusive lunch and vegetarian menus at €55. Then in August, we went to the hotel bar where Simon makes superb cocktails. We had lunch again and were served by Fabrice and Christophe, as well as our daughter; it was perfect. I highly recommend La Barbacane, a place full of history and charm.

Excellent food, top-notch service, good wines at reasonable prices. Beautiful location. Definitely worth the detour. Prices reflect the quality of this restaurant.

With a magnificent and welcoming setting, coupled with impeccable and friendly service, we had an experience we won't soon forget. The food was of exceptional quality, and the service was flawless. Special mention goes to Mohamed Ali, a truly delightful person who guided us through our meal with style and warmth.
