That the fish and shellfish were cooked to perfection was not a surprise: I expected it because of the 3 stars and I was not disappointed. But I never imagined that a pepper, a tomato or a chard could be so good.
The service was up to par: never a wait that was too long, efficient and not stuffy as you can sometimes see in less good restaurants.

Top quality food, with top ingredients. However for my taste too much focus on the pure products. I personally prefer a more complex cuisine. But if you like an cuisine with a focus on an ingredient, you can't go wrong with La Marine.

Enjoy Noirmoutier-en-l'Île with all its facets as a menu with all your senses. We have been guests before. So now with the well-deserved 3 stars in the still minimalistically renovated restaurant. Only the most necessary, just the right thing, with the perfect pieces of fish, seafood and vegetables. Nobody comes to Herbaudière, at the very tip of the island, right by the harbor, without having already taken in the island. Small blue and white houses. Salt marshes, beaches, uncultivated, with algae that the surf washes in and carries out again. Admittedly, Alexandre Coullion doesn't object to the noise and smells of a city, like Tohru Nakamura in Munich. He distills and composes the austere beauty of his island into an unparalleled declaration of love. In addition to the perfect service and the flawless dishes, this is the secret power that lasts. Alexandre Couillon brings a great concept of French gastronomy focused on the sea, an experience that I recommend trying to anyone who has the opportunity. There were some dishes that lacked salt to my taste, which is why I didn't give it 5 stars. Excellent waiters.
