Fantastic, we loved it! The staff were very friendly, the food was delicious, the cousoulette was spectacular—the sausage, the duck, and the beans were all amazing—and the dessert was great too. We had the €26 lunch menu, and it was a total success. I would definitely go back.

A pleasant and quiet place for what you can find in Carcassonne. Affordable prices if you're looking for traditional cassoulet, with more elaborate options if you want something different from the typical dish. Friendly and attentive service. A very good set menu for €26. It's advisable to book in advance or arrive early.

We’ve dined here many times and are never disappointed. On our most recent visit, we chose the €65 dégustation menu, which offered more than enough food and an exceptional overall experience. The amuse-bouche — a crab bisque with octopus — was outstanding and set the tone for the meal. The canette was remarkably tender, easily among the best duck I’ve had, melting in the mouth and beautifully complemented by its accompaniments.
Every course was thoughtfully composed, with flavors that worked together seamlessly and demonstrated the chef’s excellent palate. The quality is consistently high, the portions generous for the price, and the ambiance and service both refined and welcoming. If you have the opportunity, I highly recommend visiting.

Alaïs's restaurant stands out in a tourist area teeming with indistinguishable establishments. The small, discreet entrance leads you to an inner courtyard, a haven of calm amidst the frenzy of the crowds outside. The dishes are equally impressive and expertly prepared: it's a pleasure to savor a cassoulet, a dish notoriously heavy, without feeling nauseous or needing a crowbar to get up from your seat.

Superb restaurant in the heart of Carcassonne. The food was excellent and of very high quality; the cassoulet was delicious and the dessert was exquisite! The appetizers were also very well prepared. Moreover, the value for money is unbeatable!

A restaurant that's barely noticeable from the outside, but what a culinary discovery it is.
High-quality ingredients prepared with great skill. The onion soup is wonderful, the cassoulet the best I've ever eaten, and the pork infinitely tender.
In short, inventive and refined cuisine and perfect service.
The only downside is the somewhat cold decor, which doesn't quite match the culinary journey on offer.
Thank you to the entire team for a wonderful evening.

Was very excited to have dinner here but the experience was just not good.
The only noteworthy dishes were the foie grass and the onion soup. The octopus had no taste, the duck casserole was just ok and the desserts were not good.
Service wise I was surprised not to be presented each dish (i.e. this dish is x, made with y and z...).
Finally the decor of the place was a miss in our opinion. The old city is so nice at night and they used none of that vibe inside the restaurant.
