We arrived late to make a reservation and were served promptly. The restaurant's decor and ambiance are very well done. A highlight is its unique restrooms. We wanted to try a good cassoulet and it didn't disappoint. It lived up to our expectations. The foie gras, duck, and dessert were all excellent. We'll definitely be back when we return.

A delightful stopover at the foot of the Cité. While I've only sampled the drinks menu so far, the welcome is exceptionally elegant. The terrace offers a haven of absolute serenity that one never tires of.
As a discerning epicurean, I commend the establishment's impeccable upkeep. Special praise goes to the Cameroonian-born woman who oversees the cleanliness: her professionalism and meticulous attention to detail are the unsung pillars of the excellence Mr. Putelat strives for. The meat display is a gastronomic promise that will bring me back very soon for dinner. A must-visit.

Disappointing restaurant, I expected better considering the prices and the photos...
If you're pregnant, avoid it!
I asked several times for my fish to be cooked again, and the third time it was still barely cooked... I hope I won't have any problems later! My partner's chicken was the same, undercooked and barely cooked.
We also asked several times for a bottle of water, and it never arrived at our table. Luckily, we had one in our bag, which we eventually poured ourselves.
It's a shame the staff isn't attentive because it's a place that could have been very pleasant.

It's very good, but the service isn't great... And having to ask for water is annoying, especially since we ordered a bottle that we had to pay for; it shouldn't be necessary.
But the food itself is very good.

Surreal – a journey in the dead of winter.
They say a picture is worth a thousand words. But during a business lunch, you don't have the urge or the reflex to pull out your phone to photograph the food.
In winter, dining rooms are often quiet. Not here.
At Brasserie à 4 Temps, the place is fully booked – and the online reservation system on their website works perfectly.
From the moment you enter, the tone is set.
You pass through a thick, almost theatrical red curtain. A true gateway. As if you were stepping onto a stage, leaving behind the city, the barracks, the noise.
In just a few steps, you enter a different world.
The attentive-eyed waiter's smile invites you on a journey that continues on your plate.
In two hours, the cuisine takes you around the world. A set menu for everyone: starter, main course, dessert.
First stop: Thailand. A red cabbage salad with citrus and mustard seeds,
perfectly seasoned, served on a fresh lettuce leaf topped with thin slices of smoked salmon. Fresh, precise, balanced.
Second stop: Morocco.
A couscous with cubes of lamb, daube-style, meltingly tender, juicy, and suddenly spiced. A generous, perfectly cooked dish, without being overcooked.
The dessert offered was chocolate mousse.
But we added a cheese plate, a return to France, specifically the Montagne Noire region, with a perfectly aged tomme, somewhere between mimolette and more rustic notes.
Special mention for the service: the shared half-baguette was immediately returned, discreetly replaced so we could finish the cheese. A small detail,
and that's where the magic happened. I even took a piece home—living in a rural area sometimes means living without a bakery.
The next morning – more pleasure: buttered bread, slightly warmed, a large cup of coffee…and the memory of a journey, between Cadaqués and the Brasserie à 4 Temps.
A must-see in Carcassonne.
I'll let you discover the pictures for yourselves.
And so I move on to the second part of my day, leaving behind the taste of a delicious, surreal memory: back to work!
The pictures of the truffle croque monsieur are from a previous visit.
