A chance discovery while passing by, and what a gem! Delicious savory tartines, an excellent wine selection, and above all, impeccable service. Special mention for the French toast-style brioche… surely the best I've ever tasted! I can't wait to go back very soon to explore the rest of the menu!

I went with my wife, we had a wonderful dinner (a toasted sandwich and a bowl of soup), everything was delicious. The owner was very attentive, spoke perfect Spanish, and the service was excellent. The dinner was spectacular.

We had a truly excellent meal; the meat was exceptional and melted in our mouths, and the combinations were very well thought out and perfectly complemented. The owner is charming, and his staff, while more discreet, are very attentive.

A must-try if you want to travel, from the owner's almost sing-song presentation of the dishes, which makes you want to try everything... he describes each dish through the lens of different countries he's visited, as reflected in the (not spicy) spices.
Local or nearly local products, simply a delight for the palate... thank you to all the staff and see you soon!

Wow! What a great find! We stumbled across le Bis Troquet while walking around Carcassonne and after seeing how busy it was night after night, we finally had dinner there on our last night. Kamel greeted us when we entered and explained all the dishes in English. The food is prepared with all fresh, local ingredients and the flavors were mouth watering. I highly recommend.
