We had dinner at this excellent restaurant in Amboise. I wasn't sure what to expect, as I'm a bit wary of overly enthusiastic reviews. But there's no doubt these are entirely deserved, and I'd even say I'm surprised they don't have at least one Michelin star.
I tried the pea velouté. And I absolutely loved it. The composition, as described, seems complicated, and one might even think it's perhaps too much. But no, the palate isn't fooled; everything is there. The delicate flavor of the peas is enhanced by the crisp notes of the goat cheese bavarois, the texture of the small pieces of smoked bacon, and the slightly acidic touches of pickled onions.
I won't go into detail about each dish, it would take too long, but one remarkable thing about Chef Stéphane Delétang's recipes is the satisfaction you get from discovering that every ingredient described is present in his dishes.
I would also like to congratulate the pastry chef for his beautiful and incredibly delicious desserts. We thoroughly enjoyed his chocolate and hazelnut financier and his strawberry bavarois. Both are so tempting you want to devour them too quickly, and you find yourself thinking, "Hmm, I could really go for another one!"
Finally, there's the impeccable service: friendly, smiling, and attentive. Madame Delétang takes such good care of her customers, quickly and with a smile, that you can't help but want to return as soon as possible. Looking forward to our next visit!

Nice food and services. The staff can explain to you in English. Lunch menu (in English as well) is offered from Wed to Fri. Starter+ Main dish+dessert (incl. coffee) just 24 euro. So highly value-for-money

The next day on my way home, I stopped at the Hippopotamus, and I received better service there than at the Lion d'Or.

The meal was very good, but the experience was unfortunately marred by disappointing service.
Between sighs at a reported allergy, dismissive remarks during the presentation of the dishes ("well, there's not much to it"), and an attitude that clearly implied we were bothering them, the welcome was particularly unpleasant.
This is all the more regrettable for a Valentine's Day dinner.
In the end, we'll remember this poor service experience, rather than the undeniably good quality of the food.
