Not rating the hotel but the restaurant. We had a wonder experience last night. The 4 of us picked the menu: Envie de tout, with pairing wine and tea.
The meals were delicious and the service exceptional. We can hear that there is passion on their craft. Nadia gave us great explanation of her passion for overall well being, connection with Tea practice in China and Japan and the fine dining.

Unfortunately, the restaurant wasn’t particularly impressive. The service left a lot to be desired, and the food felt rather repetitive. I wouldn’t consider it the best choice for anyone looking for a truly memorable gastronomic experience.

Very good restaurant, very fine and refined dishes, but when we are offered drinks, they could bring us the price list to avoid surprises and the owner does not take care of people who do not order the tea that she absolutely wants to sell.

We had known about this restaurant for a while but only had the chance to visit this past week during a recent trip to Normandie...and it was well worth the wait. Everything exceeded expectations: the setting, the service, and especially the famous cuisine of chef Philippe Hardy and the careful attentions of his spouse, Nadia, who deserve their hard-earned Michelin star with their distinctive and creative menu, hyper-local ingredients, and warm and welcoming hospitality. My husband and I are both musicians and found the whole experience like an exquisite, multi-layered composition, "une symphonie véritable des délices!," as we told Madame Hardy on leaving. We made our selections from two different menus -- and both were filled with delightful surprises, from the copious and delicious amuses gueules to the extraordinary bread ritual, with its rare smoked butters, salts, spices, and honey, to the perfectly proportioned entrées and plats, and beautifully subtle fish preparations, followed by discrete desserts (with possibly the best île flottante I have ever tasted) along with parting sweets. Amazing. For those wanting to extend the pleasure, there was also a Japanese tea ritual on offer, which we did not choose, but watched others enjoy, so it will be something to try next time. This restaurant, despite its extremely high standard of execution, was also surprisingly relaxed and unpretentious. It should definitely be on every list of "addresses incontournables." We cannot wait to return.

Very pleasant, very welcoming, excellent location.
The 7-course meal was very good.
However, my wife was on a special diet, and I think that for some dishes, for convenience, I was served the same as her, while at neighboring tables, the dessert was different.
Regarding the room (Tsarina), I think it could use a refresh (the shower head doesn't work). The breakfast was very good but overpriced at €25 per person (especially since the service didn't match what was advertised in the rooms). It's a shame that when you book a night, the 7-course dinner doesn't include breakfast.
That said, a pleasant stay.

A truly wonderful discovery! Our first impression was of a magnificent stone facade. Barely out of the car, we were enveloped by a sweet and enticing aroma. We received a warm welcome from Nadia and Philippe Hardy. Ms. Hardy showed us to our suite upstairs. The Arabesque suite is exquisitely decorated. Almost simultaneously, we felt a sense of well-being, a gentle feeling of serenity. This room exudes a pleasant, cozy, enveloping, and soothing atmosphere.
After a stroll to explore the surrounding area, we took our seats in the restaurant. And so began our culinary journey. We started gently with amuse-bouches that did their job perfectly, awakening our taste buds. This was followed by a Chausey clam tartlet with tangy apple and fennel, and a trout gravlax with rutabaga, flaxseed praline, and pike caviar. The next course was a seafood-focused affair: red mullet, a variation on peas, and an extraordinary fish fumet. On the other side of the table, a pork loin of incredible tenderness, cabbage ravioli, and, again, a memorable jus. To conclude this culinary journey, we opted for a goat cheese mousse with wild garlic, popcorn, and Tasmanian pepper. This wonderful journey of food, wine, and tea pairings was masterfully orchestrated by a friendly and talented renowned chef and his wife, a tea master, as well as a kind, attentive, and smiling staff. We didn't have the opportunity to meet the kitchen team, but judging by the sights and tastes of this fantastic culinary experience, we can only applaud their undeniable skill. We warmly thank you for this stopover in honor of my sweetheart's birthday. And we hope to return for another stopover and a wellness break.

We booked a table for Ascension Thursday lunch to enjoy the La Petite Table menu at €29.90, thinking we could take advantage of it – the menu on the website states, "This menu is served every lunchtime from Tuesday to Saturday." However, the menu on site indicated that this menu is not available on weekends and public holidays. We then opted for the more expensive menus, which, while good, did not live up to their price or deserve a Michelin star.

An excellent birthday celebration at this extraordinary restaurant: they organized the reservations to stagger arrivals, the setting is magnificent, the menu offers a varied selection with excellent value for money, the dishes were delicious and beautifully presented, the service was attentive, friendly, and professional, and there were a profusion of delightful touches to enjoy throughout the meal. A true delight, a delight. Thank you so much.

As for the food... absolutely nothing to complain about, IMPRESSIVE... exceptional cuisine. For the price, go for it without hesitation. However, the service was terrible. We arrived between 12:30 and 12:00 instead of 12:00, and I simply asked if we could have a drink while we waited, and the owner gave me a truly awful reception... as I always say, you're not on vacation to be yelled at. It's a shame because otherwise, the establishment is top-notch.
