Excellent gourmet dinner, featuring local and international produce, all expertly prepared and cooked to perfection. The portions were generous, the wine and drinks list was concise but focused on the essentials, and the service was energetic, friendly, and efficient, especially for a Saturday night. The noise level was reasonable for a full restaurant. The interior decor, however, was rather plain, but what matters is what's on the plate. I'll definitely be back.

A very good restaurant in Tarbes. The dishes are prepared by an excellent chef. The menu is small, but everything is high quality and fresh. Reservations are necessary as it only seats 40 and is very popular. The wine list is decent. The atmosphere is warm and the service is friendly. I recommend this establishment.

The food was wonderful. The service was OK except fir two occasions. The first was the red wine arrived, 10 minutes later I asked the waiter where the white wine was. Nearly ten minutes after that I had to stand up and ask seek a more senior person and ask her where it was. Her response, rather than an apology and a courteous promise to follow it up, was a very curt "Je le cherche". Secondly the member of staff taking our orders neglected to write down one member of the group's entrée choice so on serving they were one short. I've read your response. I'm surprised that you feel unable to respond positively to my praise of your good food. I'm unsurprised you feel unable to accept responsibility for the problems I raise. One of, if not the best, restaurants in Tarbes. This November, I recommend the Saint Jacques walnuts—a true delight! Although it's not quite a mille-feuille, I highly recommend this dessert.

We visited this bistronomic restaurant twice, on August 12th and 13th, where gastronomy is celebrated with local produce (not to mention the excellent wines). The dishes are delicious, showcasing the culinary expertise, creativity, and skill of chef Mathieu. The welcome is warm and the service is top-notch. A special thank you to Laura for her recommendations on the dishes and wines. Once we're settled in the area, we'll definitely be back to tantalize our taste buds once again.
