22/08/2026: A very good restaurant in Beaune. We had reserved a table for 9:30 pm for a late dinner and were notified beforehand via WhatsApp that it was possible to sit at the bar at 8:30 pm, which we declined.
Upon arrival, we were greeted by the friendly sommelier and a very nice server. After we explained our reservation in broken French, they switched to English – no problem. The menu is small but excellent, with one page of sharing dishes and one page of main courses and desserts. As we understood, the kitchen closed at 10 pm, so we ordered a generous selection of appetizers. To accompany them, we ordered a PYCM Chassagne Montrachet 2023 at a very reasonable price, served in Riedel Riesling Veloce glasses. In my opinion, not the "correct" choice; a larger glass would have been more appropriate, but overall, it was perfectly fine (9.5/10).
For the meal:
We were served warm toasted bread with salted butter as a starter. The food was very good, although the bread was almost too hard (7/10). The salad, served in a soup plate, was fresh, green, and very crisp, with a citrus/herb dressing (8/10). The snails, served in a very hot cast-iron dish, were salty, buttery, herbal, and rich in umami – a perfect pairing with the wine (8/10). The thinly sliced, dry-aged Galician beef was the highlight. Paper-thin slices bursting with flavor; I've never eaten better meat in my life – the pinnacle of the evening (10/10). The foie gras, a thick slice studded with coarse sea salt and served with slow-cooked onions, was also delicious. Full-bodied, cooked to perfection, and superb (8.5/10). For dessert, we ordered something similar to a clafoutis aux mirabelle plums; unfortunately, I can't recall the exact name. Sweet, buttery, with a pleasant acidity from the fruit and served with an outstanding vanilla cream. Absolutely fantastic! (10/10).
Regarding the service: The service was generally very friendly and attentive, but not without its flaws. Our wine glasses were empty for extended periods on several occasions, we waited about 15 minutes for our order to be taken, and after the bread basket was empty, but there were still several dishes on the table that needed it, it was unfortunately forgotten. Fresh bread was brought upon request. However, all these minor "mistakes" were easily forgiven; the restaurant was full, the staff very busy, and we were completely understanding.
The only real criticism of the service was that around 11 p.m., when we were the second-to-last table, our glasses were refilled very quickly. We felt a bit rushed, which left a slightly unpleasant aftertaste to the evening. (6.9/10)
When we asked for the bill, it was brought promptly, we were thanked, and we were given a very warm send-off.
... In summary, Ma Cuisine is a great restaurant in Beaune, a little off the beaten tourist track. Excellent food, a lovely atmosphere, reasonably priced wine lists, and good service. Highly recommended (8/10).
19/08/2026: The restaurant opened 6 months ago and it's wonderful. The chef is very friendly and what he prepares is excellent. Not to mention the wine list, which offers incredible selections.
