The fouees weren't golden enough. The fromage blanc was very grainy and acidic. The crumble topping was very thick. The coffee was served cold. The water for the tea was barely lukewarm. An experience we won't repeat.

As a group of six, we opted for the €26 set menu (including Saumur Champigny wine and coffee). The welcome and service were pleasant. The restaurant was full, so it was quite noisy, likely due to the setting—it's located in troglodyte cellars. But it's a truly unique dining experience! We ate very well and left completely satisfied. The vegetarian menu was excellent; I highly recommend it.

A very good cave restaurant, exactly what we were looking for; we chose the tasting menu, a wonderful introduction to the region through its cuisine, everything was excellent from start to finish. We thoroughly enjoyed ourselves.

Passing through Saumur with our Savoyard friends, they had a very specific idea in mind: to try the famous fouées (a type of flatbread). So, we arranged to meet at Les Nobles Fouées, nestled in a troglodytic setting as unusual as it was charming.
As soon as we arrived, the atmosphere was set: "We're going to be cold..." the ladies murmured, half-worried, half-amused. And indeed, let's just say the place prioritizes authenticity over tropical warmth—it's not quite Koh Lanta, but almost... Loire Valley cellar style.
The welcome was courteous, no complaints there. Meals are offered as set menus, which simplifies the choices... or limits them, depending on your mood. As for the quality, it's difficult to give a definitive opinion: it's an experience, let's say, that's best lived rather than analyzed. As they say, to each their own... The service? Well… the service did its job, without any particular flair but also without any major missteps. Special mention, however, goes to the slightly surreal moment when our vegetarian guest was offered… a single raw mushroom on her plate. Minimalist, certainly. Conceptual, perhaps.
In the end, our Savoyard friends left a little perplexed, but not exactly disappointed. The bill, meanwhile, remained quite reasonable—Ms. Visa didn't even raise an eyebrow.

A very charming cave restaurant. We came as a large family, having booked in advance, and received a very warm welcome! The fouées (a type of flatbread) were delicious!
