L'oliveraie sur Carcassonne

21/09/2026: We have been frequenting this restaurant for some time now, and with each visit, we have noticed a steady improvement in the cuisine, and above all, a remarkable consistency. Our latest eight-course tasting menu confirmed this impression once again. The cuisine is masterful and cohesive, built around high-quality, seasonal ingredients, with a strong emphasis on local produce. Mackerel, foie gras, frog legs, lobster, John Dory, and French Wagyu beef are all prepared with precision and respect for the ingredients. The cooking is perfectly executed, the combinations are spot-on, and the sauces add depth and balance to the dishes. We were already particularly impressed during our Easter lunch by the dishes featuring lamb, seasonal truffles, asparagus, lobster, and turbot. This latest experience confirms for us the evolution of the cuisine, but above all, the consistent quality of the offering. We also greatly appreciated the wine pairings, with relevant and sometimes surprising choices that perfectly complemented the different dishes. We sensed a genuine knowledge of the local terroir and ingredients throughout the entire team. The service mirrors the cuisine: attentive, warm, professional, and well-orchestrated. We felt a close-knit, dedicated team, committed to creating a truly exceptional gastronomic experience, right down to the smallest details. Our feeling is that the restaurant has reached a level of mastery, personality, and consistency that, in our opinion, deserves full recognition.
