01/04/2024: Very nice little restaurant with fresh and authentic ingredients. This was our second time there and the food was extremely tasty.
24/03/2024: The Cantine du Troquet Daguerre is much more than a canteen!
Chef Christian Etchebest (no relation to chef Philippe Etchebest) owns 6 canteens, 5 of which are in Paris. The canteens each have their own identity but they share a few dishes and an influence from the South-West.
Daguerre is Christian Etchebest's 3rd canteen, entrusted to Nicolas Gras, formerly pastry chef at Bristol and Ledoyen.
We enter a small room with a resolutely bistro and successful decor. The tables are close to each other to reinforce the conviviality of the place.
The menu has the apparent simplicity of a bistro (eggs mayo, ceviche), but we feel that it hides originality and work (tart lean ceviche, fried onions and sesame). We were particularly attracted by the starter menu, and we improvised a sort of mezze starter. The tasting confirms our intuition from the Egg Mayo from the Cantine. Nice presentation on a slate, and the mayonnaise is delicious, slightly spicy; A favorite ! We continue with the Heirloom Tomato Salad, Creamy Burrata, and the title is absolutely correct, the Burrata flows over the tomatoes, it's delicious. Ceviche has lovely flavors, and it is sliced into thin strips which allow the marinade to soak into the flesh. As Les Couteaux are by Christian Etchebest, we take a double portion and nothing but happiness: generous dish of knives, beautifully cooked, decorated with small vegetables and generously drizzled with hot olive oil, which we sauce with pleasure at the end .
Clearly, we will have to visit Christian Etchebest's other canteens!
The service is also bistro, without frills, even a little rough at first, but in fact tinged with the warmth of the South West as soon as we chat a little. Great efficiency, the dishes come together quickly, without jostling the customer.
We went there twice, in June and January. Each time, we paid around 50 Euros per person for 3 starters each, a glass of wine, mineral water and coffee.
