The dishes are delicious; for example, my last choice, being a fan of sweet and savory, was a mignon with a light grapefruit sauce, followed by quince with a small basil ice cream for dessert... a pleasant surprise. 13/03/2026: Lunch in an iconic Troyes location. What a lovely name for a brasserie (La Paix)! It's so nice to hear the word "peace" right now. A typical spot to celebrate my friend's 57th birthday. After a glass of Champagne from the Aube region, followed by sole meunière for one of us, and half a rib of beef for the other with lightly caramelized sautéed potatoes, and finishing with apple tart and homemade flan, not forgetting the coffees, life is simple: friendship, good food, good wine, in a beautiful setting, with a warm welcome—life is good.

The setting was lovely, and the atmosphere was warm. The dishes were generous and very tasty. It's a shame that, as it was the end of service, we didn't get to try the desserts.
